The new ROC Racks from ROC BBQ Supply are made from 304 stainless steel and will put up with all the abuse you can throw at them. Use them to manipulate multiple small proteins like wings or jerky quickly or to keep larger proteins from soaking in their own juices like pork shoulders or prime ribs. They also make an excellent prep tool for drying out the surfaces of meat prior to cooking to help crisp skin or build a smoke-ready pellicle.
